Carolina Summer Grilled Peach Flatbread

We put peaches in the hummus. Then we put more peaches on top. I know how that sounds, but stay with me — it works, and it's become the thing we keep making on weeknights when it's too hot to think about anything complicated.

The Carolina Summer Grilled Peach Flatbread

Twenty minutes, one pan, no oven required.

  • One jar of Carolina Summer hummus
  • 2 ripe peaches, halved and pitted
  • Flatbread or naan (store-bought is fine)
  • A handful of arugula
  • Crumbled feta
  • A drizzle of honey
  • Olive oil for the grill or pan
  • Flaky salt to finish

How to build it: Brush peach halves with olive oil, grill cut-side down (cast iron, grill pan, or outdoor grill) about 3 minutes until you get color and they soften. Slice into wedges. Warm flatbread the same way, a minute or two per side. Spread a generous layer of Carolina Summer hummus across the flatbread. Lay grilled peach slices over the top. Add arugula, scatter feta, drizzle honey, hit with flaky salt.

Why it works: Carolina Summer already has real peach in it. The grilled peach amplifies that and adds something smoky and caramelized. Arugula brings bitterness to cut through the sweetness. Feta adds salt and tang. Honey ties everything together without pushing into dessert territory.
